Abstract The aim of the present study was to determine degree microbial contamination aqueous extracts green and roasted coffee originating in India. samples used this analysis were obtained by two extraction methods: hot cold extraction. If a load found, same filtered using sterile 0.22 μm pore size filters from PES (Polyester) for decontamination. working methodology based on Standard SR EN ISO 21149/2017 which provides general guidelines counting detecting mesophilic aerobic bacteria as medium isolation, cultivation microorganisms (bacteria fungi) non-differential environment. experimental results showed all samples. level is different taken under study, depending type used, or roasted, but also other conditions, such wet dry processing. Roasted much less contaminated compared coffee, due thermal (incomplete) sterilization roasting procedure. conditions temperature distilled water prepare extracts, their non-sterile handling, are factors that determined contamination.
